I have seen a few different recipes for these pop up in the last couple of months and I LOVE me some s'mores so I thought I'd try them out. Plus, since we got our fire pit for Christmas, I have had s'mores ingredients but we haven't had the chance to make them and now it is getting hot. So, I thought I would make them PW style and take pics along the way but David has our camera at work so I just took pics with my phone. They turned out super yummy but not "out of this world" perfect, so I'll include changes I would make if I make them again:
Ingredients:
Box of brownie mix (and water, oil, and eggs to make it)
Graham crackers (one sleeve)
Hershey's bars (I used one package of the little ones)
Marshmallows (I would recommend using mini ones)
Side note-- these are not difficult by any stretch of the imagination so if you have ever baked in your life, you can pull these off. End side note.
Here we go:
First, choose your baking pan (I used one that is a little smaller than 9x13 but I would use 9x13 next time to make them a little thinner). Break up 3 sheets of graham crackers into 6 large squares and place them on the bottom of your greased pan.
Prepare brownie mix per the package instructions (If you have a choice, choose "fudgy" over "cakey") and pour over the grahams. I used a glass pan so I could hold it up and see if the crackers had shifted. They indeed had to I just stuck my fingers in the batter and moved them around until they were back in place. Then I licked my fingers. TMI? The graham crackers will probably rise to the middle of the batter while baking which is perfect.
This is when I started with the pictures:

While the brownies baked, I prepared the rest of the ingredients.
I chopped up my chocolate pieces into smaller pieces. Next time I will probably use mini chocolate chips instead of chopping chocolate. Just make sure your mini chips are milk chocolate.
I also didn't have mini marshmallows, so I decided to cut up big ones. At first I did fourths but then decided that cutting them in half would work just fine. It was still a lot of mallow though so I would definitely use minis if I was making this again. Just use as many as you see fit, I threw mine in a measuring thing while cutting so I could see how many I used, it was around 3-4 cups.
Take the rest of the graham crackers from your sleeve and place them in a ziplock bag and crush them up. I left big chunks in there but wouldn't do that again. Just crush them up really fine (use a mallet).
Your brownies should be ready to come out of the oven soon... be careful to not over bake them like I did. Mine were much too cakey and not near enough fudgy.
They don't need to cool, go ahead and top them with your marshmallows.
Then pop them back in the oven and (this is important) WATCH THEM. I put mine in on broil so that the marshmallow would get nice and crispy. This did not work. I think bake would work better because it will heat the marshmallows and make them melt some as well as making them crispy. So, just pop them back in the oven on the same temp that your brownies baked. They won't need to stay in for very long so watch them carefully.
As soon as you take them out, top with chocolate so that it is nice and melty.
Then add graham cracker pieces:
I took mine to small groups to have the men decide if they were good. They said yes.
So, overall I counted them a success. Especially because we had a lot of people out for small groups last night and the pan was still empty by the time I left. They are pretty messy so I would recommend eating with a fork. I think that if I baked the marshmallows next time, they would be softer and gooeyer (not a word I know) so less difficult to eat.
