Yummy Monday

Well I didn't forget so here is a new recipe. Someone told me that my recipe last week had too many ingredients so this one should be really easy. It is a recipe for sub sandwiches that my friend's mom made for all of the kids in high school. Her name was Lib so they were fondly known as Libwiches. They are great for an easy dinner, game day food, or even an appetizer (sliced in about one inch slices). You can play with the different meats/cheeses you add and the amount but the standard is:

smoked turkey
honey maple ham
hard salami
pepperoni (I use turkey pepperoni)
shredded mozzarella
sliced swiss
Italian dressing
french bread loaf (or Pepperidge Farm "hot and crusty" bread)

Buy as much meat as you think you'll need (depending on how many you are making or how meaty you want them to be). You won't need as much salami or pepperoni as you'll need turkey and ham. Slice your bread in half and put Italian dressing on both sides (don't overdo it). Layer turkey one side, ham other, salami over turkey, pepperoni over ham, mozz over salami, swiss over pepperoni. Toast in oven until cheese is melted. Put together for a yummy sandwich!

We just had these today for lunch and they are always a fave. I like to serve them with sliced fruit.
